With my massive sweet tooth, it’s a good thing that I
learned early on that moderation is everything. I recently had a discussion
with my brother (who is a major foodie) about French cuisine and we agreed that

moderation.

Pop Culture Shock Crème Brulee (This will make 4 servings):
Ingredients
- 1 1/2 teaspoons vanilla extract
- 3 egg yolks from large eggs
- 1/2 cup confectioner's sugar
- Pinch salt
- 1 1/2 cups heavy cream
- 1/3 cup fine white sugar
Instructions
- Heat the oven to 275°F. Whisk together egg and vanilla
- Add the confectioner's sugar and a pinch of salt, and whisk.
- Add cream and whisk it into the egg yolk mixture
- Pour mixture into custard into 4 ramekins
- Place ramekins onto a baking and into the oven
- Bake for 50 minutes
- Remove from oven and let cool for about 5 minutes and then refrigerate for 30 minutes
- Now comes the fun part … dab the tops of each custard with water and sprinkle a layer of sugar across the entire top. Fire up your EurKitchen Professional-Grade Culinary Torch to 500°F and move across sugar evenly until you begin to see the sugar turn golden brown.
